What Happens at Baking Boot Camp?

We pack an incredible amount into two days.

Depending on the Boot Camp, we may work with:

  • Artisan and everyday breads

  • Sandwich breads
  • Burger buns
  • Naan and flatbreads
  • Laminated doughs and pastries
  • Croissants
  • Scones
  • Cookies
  • Cakes and desserts
  • Waffles and breakfast favorites
  • Crepes
  • Curds, creams and fillings
  • Fresh and whole grains
  • Pressure cooking
  • Savory dishes
  • And plenty of surprises along the way
 

Across the experience, we'll work through 25+ recipes, techniques and preparations.

But I don't want you to leave knowing how to make only 25 recipes.

I want you to understand cooking well enough that those recipes become the beginning—not the end.

This Is Hands-On

There is a big difference between watching someone bake bread and putting your own hands into the dough. At Boot Camp, you do the work.

You'll mix it. You'll knead it. You'll shape it. You'll bake it. You'll taste it.

And when something doesn't go exactly right, that's often when some of the best teaching happens.

My goal isn't perfection. My goal is confidence.

I want you to go home willing to open your pantry, pull out your flour, turn on the oven and create something wonderful without being afraid of getting it wrong.

 


And Yes...We Eat!

This is Chef Brad's house. Nobody is going hungry. Meals are part of the Boot Camp experience. We cook together, we eat together and we take time to enjoy what we've created. Some of the best conversations of the entire weekend happen when the cooking stops for a few minutes and everyone gathers around the table. Because that's where food is meant to take us. Back to the table.

Why I Teach Boot Camp in My Home

I could teach these classes in a commercial kitchen. But that's not what I want Boot Camp to feel like.

I want you in my home.

I want you working in a real kitchen, gathering around a real table and experiencing food the way I believe it was intended to be experienced.

Personally. Generously. Joyfully. Together.

After a lifetime in professional kitchens, restaurants, television, teaching, writing cookbooks and feeding thousands of people, some of my greatest culinary experiences still happen in a home kitchen surrounded by people.

That's why I created Baking Boot Camp.

 


More Than Recipes

You will leave with a lot of recipes. You'll leave with new techniques. You'll probably leave very full. But my hope is that you leave with something much more valuable:

Confidence.

Confidence to try. Confidence to create. Confidence to invite people into your home. Confidence to gather people around your table. Because at the end of these two days, my greatest hope isn't simply that you'll become a better baker.
